Site visits, meeting up with friends at a pumpkin patch and mom life at home
Welcome to the Sunday series, friends! I went to the new house four times this week because cabinetry is being installed (!!) and we’re full speed ahead. I took the kids to the arboretum meet with some of my friends and their babies for a picnic and pumpkin patch wander which was the highlight of our week. We finally finished the Fall menu checklist (shared in this post) so it’s time to start from the top—my favorite.

my favorite Target sweateshirt that feels like pajamas. long-standing favorite jeans ever. similar sandals. necklaces I wear every day (chain. pendant.) old madwell hoops I’m shocked still exist.
I doctored a box of Simple Mills pancake mix by adding fresh pumpkin, pumpkin pie spice and a splash of maple syrup. They were heavenly on the coldest morning of the month.

look, they won’t win any beauty pageants but the red pot is O’s favorite vegan chili (other favorite-a healthier option- is this recipe) and I pretty much just make up a version for the kids. I can’t eat beans so I don’t partake but they’re obsessed. Top with tons of natural corn chips, vegan sour cream and vegan cheese.

I try to keep ground beef or ground turkey cooked with a packet of siete mild taco seasoning ready to go in the fridge for a fast lunch. I usually have it with a big salad but I’m gonna be real and say I went for the sprinkle of arugula and extra taco instead.
the world’s best paleo tikka masala— I make this at least once a month and use chickpeas instead of chicken for O. Usually it has some greens on top but I didn’t have any and, honestly, I pretty much never add them anyway. I make this paleo naan for myself because I don’t eat rice and it hits the spot.
current favorite— I grab ours from Costco
And for some balance, Applegate gluten free nuggets tossed in the air fryer and Daiya mac and cheese. Two thumbs up.
