After two weeks in Canada and a week of trying to keep our heads above water after jumping back into school and practice and all the things with a sick baby, tiptoeing back into regularly scheduled programming felt really good. O and I pulled late nights with Lema helping him prepare for a project and presentation (he got a 100% so it was worth it), we had three basketball practices and three games, there were birthday parties and house meetings and all the usual suspects. I’m sure I’m not alone when I say there’s just something comforting about the hustle and chaos of regular life.
listen, ignore my balding brows and focus instead on the $13 earrings I can’t get enough of. I actually got the $18 two pack because I couldn’t choose between the gold and silver and love them most with a simple t-shirt or sweatshirt and jeans outfit to keep from feeling fancy.

this is from O’s batch which I made hours before he was home for dinner, but this is one of our top 5 favorite meals that we all love most but I forget about every couple months. Healthier homemade hamburger helper is easy, fast, filling and absolutely delicious. If the noodles drink up too much of the goodness (like the photo) and when you reheat it for leftovers, add a bit more broth and milk and BAM. Back in luscious territory. I make a full separate pot with gluten free noodles and organic beef for us keeping everything else the same.
I made this apple, cranberry and raisin stuffed acorn squash for O to eat as a side or for quick lunches. There was a ton of leftover filling which is perfect over rice. He’s vegan, so I used the leftover vegan meat from his homemade hamburger helper
she’s not much of a looker but my goodness, this paleo crumble top apple pie was phenomenal.
I’m not typically a pinterest-meal-mom but I saw these and couldn’t resist. I made a giant stack of pancakes for the night that O takes all the kids to back-to-back basketball practice so I could blast Olivia Rodrigo and fail and assemble reindeer.
if you live in DFW, Local Creamery is God’s gift to the world and their vegan selection is the best thing this side of the Mississippi. This is the Vegan Peppermint Bark which tastes exactly like a Shamrock Shake. swoooooon.
You’ve seen this a million times but thought I should include it because it’s how most meals look. Salmon I prepped early in the week with all my favorite salad fixins for an easy lunch.
I also made this chicken enchilada soup at the start of the week which lasted for two dinners and I pulled chicken out of it for a sandwich twice. Can’t recommend it enough. Top with lots of cheese, sour cream, avocado if you’ve been tricked into thinking it’s good and corn chips.
