This was a week I can look back on here at the end and say it was good. One of the hardest weeks I’ve had in a while, but the kind of Sunday to Sunday stretch that leaves you bonded in a new way to everyone you love and brimming with conscious gratitude. I also hosted sister Bachelor night (where we almost never actually watch the show and just talk and laugh for hours instead) for the first time this season and it was the perfect mid-point pick me up that turned things around. I had so many days with friends and sisters, thoroughly enjoyed the bitter cold, we had our first Spring Ball weekend with all the sports mom chaos and a date night outside the house. Not much to report, but I did wear a few outfits I truly loved and also can’t get enough of the $28 viral Target jeans I was skeptical about for over a year.

Maybe it’s because my cycle is imminent, maybe it’s because February is beautiful but challenging, but I’m just a bit exhausted in the kitchen right now. I’m not reaching for anything complex, but I am craving nourishment. I won’t make this exact menu since we have a little weekend trip coming up and I have a few work deadlines that mean I need meals to be quick and hearty. I hope this serves you in a similar way.
