Welcome back to the Sunday Meal plan, friends. Since I’m reporting live from Spring Break, my own plan for this week’s meals aren’t all that grandiose. I do love to give you the same meal plan I use in our home because then I avoid doing double the work of piecing together a cohesive menu for Substack and staring blankly into the fridge at my own house. It’s going to be one of those weeks, though.
I also shared on Instagram that I experienced my first chemical pregnancy last month. Spending part of the month trying to get pregnant, part of the month pregnant and the rest of the month bleeding with a bizarre period meant I just had zero desire to get dressed. I’m still in that zone and not really photographing my outfits, but I shared three outfit formulas here with favorites I keep repeating.
One Pan Creamy Tomato Gnocchi with Chicken Sausage. This just sounds heavenly served with some form of garlic bread and a simple salad.
Sweet & Sour Pineapple Broccoli Chicken Stir-Fry. Anything I can serve over rice and throw together quickly, I’m here for.
30 Minute Healthier Homemade Sloppy Joes. My kids have been deprived of this particular sandwich experience because it never crossed my mind, but we all watched It Takes Two together recently and if you know, you know. And it suddenly I needed to clear my schedule to add this to the menu.
BLTA Sandwiches. My kids love a BLT and I arguably love them even more because anytime I can throw together a sandwich and call it dinner, I’m sold. Bake your bacon to make this even easier and for it to remain flat for sandwiches and since we’re not in tomato season yet, sprinkle salt and pepper on your cut tomato slices to bring out the fullness of the flavor.
Simple Baked Salmon. I love salmon and lemon and every recipe Downshiftology releases is a banger. This with leftover rice from earlier in the week and whatever vegetable needs to be cooked is a win
Iced Oatmeal Cookie Bars (GF+DF). These sound delicious and look even better.
Chunky Monkey Banana Bites. These are a favorite for my kids and it feels like a fun addition to the Spring Break Menu.
I also wanted to highlight my Styling and Design Consulting Services here at the start of the month. These sessions have been such a joy for me and the feedback convinced me to switch from opening three slots every now and then to offering client slots until I’m no longer able to. Most of my clients have been postpartum mothers heading back to work and trying to feel like themselves in their wardrobe again, but I also have stay at home mom clients, business professionals and women who find themselves with a closet full of clothes they no longer love.

I'm so sorry to hear about your chemical pregnancy- it's crushing. 😞 I had one a year and a half ago and seeing that second line appear and then disappear made for a week of anxiety and then so much sadness. Sending you love.
