Thank you for taking the time to write these posts! They are one of the highlights of my week. A “simple joy” I treasure reading with a cup of hot coffee in hand. 🤗 Also, you are a wealth of knowledge as I’ve just been diagnosed with an autoimmune thyroid disorder (Graves) and I’m constantly looking for well vetted recipes and snack options that are free from gluten, dairy, processed sugar, etc.

Growing up we had Salmon croquettes (patties) every single week. I still love them. There’s an Asian version I found that’s amazing.
