I have such high ambitions to try both the pot pie and the roast this week, but I struggle doing any major cooking with kids around. Hoping that the mantra “if Jill can do it, then I can!” will get me through!

YOU CAN! If you find a unicorn window of time, try making the pot pie filling ahead and keeping it in the fridge. Just dump it in pre-made pie crusts when you're ready! That's why pot pie is my favorite(: I also ended up swapping pot roast for chili in my own menu and it was 100% the right call. You've got this.
